Salt, Fat, Acid, Heat: Mastering the Elements of Good Cooking by Samin Nosrat

informative inspiring slow-paced

5.0

So like…my meals fall squarely into “things I learned by watching my mother cook and then butchered beyond all recognition due to being veggie”, which is FINE most days but also sometimes I would like to cook a little better or at least more reliably.

This is a book for that.

It is not necessarily a book for vegetarians, I now know far more than will ever be relevant about how to cook meat, but there is a lot here that will be immediately useful (heat the oil first! heat it! oil! first!) even on my tiny food budget.
